Artists’ gathering at a Los Angeles restaurant

Chef Ali Mesghali’s love of cooking began long before he stepped into a professional kitchen. It was shaped by childhood memories, family traditions, culture, travel, and an enduring appreciation for the power of food to bring people together. Growing up between Esfahan, Iran, and Los Angeles, California, Ali experienced two very different environments that would ultimately influence the chef he would become. His connection to Persian culture, combined with the diversity and energy of California, helped create a culinary perspective that was both deeply rooted in tradition and open to creativity.

For Ali, cooking was never simply about preparing a meal. It was about creating an experience. From an early age, food represented family, hospitality, celebration, and connection. Persian cuisine, in particular, offered a world of aromas, colors, textures, herbs, spices, and carefully developed flavors. Meals were occasions to gather around a table, share stories, welcome guests, and celebrate everyday life. Those early experiences planted the seeds of a passion that would eventually become a lifelong career.

As Ali grew older, his interest in food continued to develop. What began as a fascination gradually became a serious pursuit. Cooking offered him an opportunity to combine discipline with creativity, tradition with innovation, and precision with instinct. He discovered that the kitchen could be both an artistic environment and a place where hard work, consistency, and attention to detail were essential. These qualities would become central to his philosophy as a chef.
